Green goodness! Pandan cake is a fluffy green colored sponge cake that is found in Southeast Asia. With similar ingredients found in other cakes such as eggs, flower, and butter, the cake has a distinct green color that comes from the use of the Pandan Leaf (Pandanus Amarylifolius).

Popular in Singapore, I came across a vendor at the exit of the Gardens at the Bay. One dollar for some cake?! DEAL.

The green tint comes from the chlorophyll found in the Pandan Leaf. The cake itself reminded me a lot of pound cake but super fluffy which made the texture even better when eating it, definitely should have bought more than one slice!
